How much does your beef cost?
Our beef is priced at $5.50 per pound of hanging weight. Our pricing includes meat and all processing fees. Our beef is custom cut, vacuum packed, frozen, and USDA inspected. Hanging weight varies based on the individual animal but hanging weight for a full cow is on average 650 pounds. Based on this average our pricing is approximately:

What cuts will I receive?
After you pay your deposit for your order, you will fill out a cut sheet that the butcher will use as a guideline for processing. Whole and half cow orders offer more flexibility for custom processing than quarter cow orders. Generally speaking your order will contain steaks, roasts, and ground beef. The exact amounts that you receive will depend on how you fill out your cut sheet and the individual animal that is processed for you. An approximate breakdown for your take-home beef is 25% steaks, 35% roasts, and 40% ground beef.
How do I order my beef?
We require an up-front deposit of $250 per quarter to reserve your beef order, which can be purchased through our online store on our website. Deposits are nonrefundable and will be deducted from your total due at the time you pick up your order. You will also receive an electronic receipt for your payment. Once your deposit is paid your beef order will be reserved for you. Please fill out and return your cut sheet to us within a week of paying your deposit.

We will email you to let you know when your order will be ready for pickup. You will pick up your order at our farm in Camillus, NY the same day we pick up your order from our butcher. Your beef will be frozen by the butcher, so prompt pickup is essential to maintain the quality of the product. Please be aware that processing dates with the butcher are approximate and not guaranteed, especially during the pandemic.

Cut Sheet Instructions
If this is your first time ordering custom butchered beef the cut sheet can be overwhelming! We're here to help.
First, select the amount of beef you're ordering. Whole and half options are self explanatory, but for a quarter you'll want to select the split half option, which will give you cuts from the front quarter and hind quarter.
Next, check the line to the left of all the cuts you're interested in. Keep in mind that any meat cuts that you do not specifically select will be processed as ground beef. Some cuts have an additional line for specifications, such as lbs or thickness. Use this line to indicate the weight you would like per cut you receive (for example, you might prefer to receive 1lb roasts for crock pot meals) or the thickness for the steaks of that type of cut you receive.
Finally, for the ground beef please select the type(s) you would like and the pounds you would like per package. The portions of ground beef let you select how much of your ground beef you would like to receive as bulk vs patties. For example, if you'd like to have most of your beef processed in bulk packages, and a smaller amount of patties you would select the 3/4 option for bulk and 1/4 option for patties.
Customers ordering wholes and halves will have the most flexibility for custom butcher requests. Customers ordering quarters please note that the number and total weight of each cut you receive will ultimately depend on the size of the individual animal and the requests made by other people who also purchase a quarter. The butcher will use the cut sheets as a guideline and will do their best to fairly accommodate everyone's order.
